Cooking Lesson: Spaghetti and Meatballs

This is definitely one of my best recipes. It’s not only my favorite food but I think my version of it is the best I’ve ever eaten. As many of you know my favorite food is spaghetti and meatballs.  I love it because of the carb-fest, the mix of flavors and a certain sentimental value.  When I was super down in life I made a spaghetti and meatballs and as odd as it might sound I had an ‘ah, ha’ moment about my life.  I recounted that experience in the chapter of my nanobook I entitled ‘The Spaghetti Incident’.  You can read about it here:

Basically I said to myself ‘why isn’t the rest of my life as good as this spaghetti’.  6 years later my life is close to as good as that spaghetti, which I am very grateful for.  Hopefully some day I will get all the way as good but a girl’s got to leave some room for dreaming. 🙂

Rachel’s Homemade BBQ Sauce

this is my most popular food blog I’ve ever done. It is a sugar free bbq sauce. Low glycemic and very good on pork, chicken and anything else.

I love sauces.  One of the hardest things about sticking to a low GI diet is that most produced sauces/dressings are high in added sugar.  In addition, most not only have sugar but have high fructose corn syrup which is like concentrated sugar.  This left me with dry, boring food.  😦

Lately I’ve been experimenting a lot in the kitchen and trying to come up with recipes that are low GI and taste good.  I’ve had 2 less than stellar successes but today I think I scored.  ( I tried to make enchiladas with my own enchilada sauce and they were such a disappointment.).

I have made my own barbeque sauce!  BBQ sauce is usually loaded with sugar, molasses and honey.  Especially my favorite, Kansas city style, which is a dark, rich sauce.   Now I made this sauce with agave but you could use coconut syrup or brown rice syrup…

Since I started my fitness quest one of my greatest food struggles has been eating a good breakfast.  I just have no appetite in the morning and what appetite I do have usually craves high carb items such as cereal or toast (and don’t get me started on french toast and cinnamon rolls!).  I like eggs well enough the rest of the day but in the morning cooking them and getting a pan all dirty seems like the biggest burden in the world!

With a few exceptions most of the ready made breakfast foods are terrible for you and very expensive (was just at store and package of VitaTops cost $5.39!).  This left me frustrated and most of the time hungry through lunch (and usually through my morning work out).
